subURBAN homestead was founded by Amy Cox.

What you will notice first about Amy is the energy in her approach to the everyday. Simple, fresh and environmentally friendly. Amy has a knack for bringing together her love of gardening, travel and her culinary experiences to create a modern, green lifestyle for her family.

Through subURBAN homestead’s sister company, Cutting Edge Consulting, Amy works with elite culinary professionals (such as renowned pastry chef, author and television celebrity Gale Gand, world famous mixologist Adam Seger, and James Beard Award Winning Author Deborah Krasner), professional athletes (the Chicago Blackhawks), wellness organizations (Sportfuel, Eat Like the Pros and the Wellness House), and corporations (Moet Hennessy and Lettuce Entertain You) creating sustainable programs.  This creative work often fuels the concepts that she simplifies and shares through subURBAN homestead.  

Amy’s mentors include local food advocates such as Alice Waters (whose name is synonymous with local, organic and sustainable) and her team at the Edible Schoolyard Project as well as Josh Viertel, President of Slow Food USA.

While serving as President of Slow Food Chicago, Amy was selected to serve as a United States Delegate to Terra Madre, an International Sustainable Food Conference held bi-annually in Italy.  She collaborates frequently with other not-for-profit organizations, including Chicago's Green City Market, Common Threads and many other wellness-based organizations.

More than anything, Amy savors the rhythm of her daily life, which is filled with simple, priceless gifts that include the love of family and friends, a strong affinity with nature, quiet reflective moments, laughter, and good food.  She deeply values her down-to-earth relationships with local, sustainable farmers, producers and artisans whose products, humor and wisdom are a constant source of joy.

subURBAN homestead and its sister company, Cutting Edge Consulting, were founded because Amy is passionate about connecting Americans with the benefits of balanced, fresh, green living.
